Food enthusiasts will have a rare opportunity to experience the cuisine of one of Canada's most acclaimed chefs when Coulson Armstrong, winner of Top Chef Canada, hosts a one-night-only dining experience at Balboa Bay Resort on Thursday, August 6.

Designed as an intimate evening of exceptional food and wine, the five-course dinner will showcase Armstrong's distinctive culinary style, combining refined technique with globally inspired flavors. Each course has been thoughtfully paired with wine to complement the menu, creating an immersive dining experience in one of Newport Beach's premier waterfront destinations.

From Humble Beginnings to International Recognition

Armstrong's path to culinary success began in an unexpected way. After moving to a new school as a teenager, he took a job washing dishes at a local restaurant. What started as an after-school job quickly developed into a passion, leading him to pursue a career in professional kitchens rather than a traditional culinary education.

He steadily advanced through some of Toronto's most respected restaurants, eventually serving as Head Chef at Canoe before making a bold decision to step away from an already successful career to travel abroad. Over the course of three years, Armstrong worked alongside some of the world's most celebrated chefs, including time at Copenhagen's renowned Noma and California's State Bird Provisions, while exploring culinary traditions throughout Southeast Asia and New Zealand.

Those experiences helped shape the philosophy that defines his cooking today: thoughtful, ingredient-driven cuisine influenced by global techniques while remaining rooted in precision and simplicity.

Today, Armstrong serves as Culinary Director of Our House Hospitality and Executive Chef of Toronto's acclaimed Prime Seafood Palace, working alongside restaurateur Matty Matheson to help lead several of Canada's most recognized dining concepts.

His national profile rose even further after winning Top Chef Canada, where his composed execution, technical skill, and creative storytelling consistently impressed the judges throughout the competition. Despite the recognition, Armstrong continues to credit curiosity, discipline, and continual learning as the cornerstones of his success.

A Five-Course Culinary Experience

The evening's menu has been curated to highlight Armstrong's signature approach to modern cuisine, beginning with two refined canapés.

Guests will first enjoy a Crab and Asparagus Tartlet, featuring king crab, green asparagus, and citrus hollandaise, followed by Cured Pickerel on Toast served with crème fraîche, white beech mushrooms, and sourdough.

The first seated course presents Shrimp Chawanmushi, a silky Japanese-style savory custard accented with pink shrimp, dill oil, and trout roe. The dish reflects Armstrong's appreciation for Japanese technique while showcasing delicate textures and balanced flavors.

Next comes a creative interpretation of a familiar classic: Eggplant Parmigiana with a sesame crust, preserved tomatoes, and Thai basil. The course demonstrates his ability to transform recognizable comfort food into something contemporary and unexpected.

A pasta course follows, pairing Littleneck Clams with smoked bacon, shallots, and fresh chives for a dish that balances bright coastal flavors with rich, savory depth.

The centerpiece of the evening is Grande Tournedos Rossini, one of the signature dishes that helped secure Armstrong's Top Chef Canada victory. Featuring beef tenderloin accompanied by king crab, foie gras, caviar, and black truffle, the dish represents a modern interpretation of one of classical cuisine's most luxurious preparations.
